This is a Thanksgiving Eve tradition in my family. Without it, I might just turn around and drive home. Just kidding. Kind of.
The best part, other than eating it, is it can be put together in minutes with no cooking required and the ingredients are all ready to go. Keeping you out of the busy kitchen, and in front of the salmon, which is the best seat in the house.
Time: 10 minutes
2 Baguettes, cut into 1/4 inch slices
12 oz good quality Smoked Salmon (1-2 packages)
1 jar of Capers
2 Lemons, cut into small wedges
1 large bunch Fresh Dill
1/2 Red Onion, minced
Goat Cheese, 8-10 oz
Arrange everything artfully on a platter and dig in. Recommended assembly instructions:
1. Spread baguette slice with goat cheese.
2. Sprinkle with capers and red onions.
3. Top with 1-2 slices of smoked salmon.
4. Top with fresh dill and squeeze of lemon juice.
5. Repeat. Repeat. Repeat.
